Parmesan-Crusted Walleye
Ingredients:

2 eggs

1 tablespoon of water

1/2 cup of Italian style bread crumbs

1/2 cup of Panko bread crumbs

1/3 cub of instant mashed potato flakes

1/3 cub of grated Parmesan cheese

walleye fillets
Preparation:

Preheat oven to 450°

Mix bread crumbs, mashed potato flakes, and Parmesan cheese to make breading.

Scramble 2 eggs with water to create the egg wash. Coat fillets completely.

Place fillets into breading and cover completely. Don't be afraid to press breading into fillet.

Cover baking sheet with non-stick cooking spray. Place fillets on baking sheet and sprinkle extra Parmesan on top of fillet.

Place in oven and bake until Parmesan cheese is golden brown. (Fillets pictured above were on the larger size and cooked for 20 minutes).
